The Las Colinas community blend is named after the municipality of Mozonte in Nueva Segovia, which means "between rivers and hills" in the Nahuatl indigenous language. This region is known for its fertile soil, its rivers, its rich flora and fauna, and its cloud-covered pine forests, nestled in the Dipilto and Jalapa Mountain ranges. Mozonte is located about 235 kilometers (about 146.02 mi) from the capital Managua and only 9 kilometers from Caravela's Beneficio La Estrella in Ocotal, and it is well-known for producing high-quality coffee thanks to its elevation, micro-climate, and generations of experienced coffee families.

 

The local community in Mozonte is deeply connected to the original indigenous population of Nicaragua, making coffee production an important part of their cultural heritage. The coffee is processed in a traditional way, focusing on harvesting ripe coffee cherries. From here, the coffee is transported to each producers micro mill for pulping in carefully calibrated machinery to prevent bean damage. Producers pay particular attention to cleanliness to do a homogenous dry fermentaiton, which takes approximately 2 days. Once the process is complete, the coffee is washed and transported to drying sites where it dries on raised beds for about 2 weeks.
