Juan Morales Perez grows coffee on about 1.15 hectares, including Pache, Caturra, and Catuai varieties. Coffee is picked ripe and depulped the same day, then fermented with water for 36–48 hours before being washed. It's dried on nylon for 3 days in temperatures from 22–27°C.
Huehuetenango is probably the most famous (and difficult to pronounce—it is generally said “way-way-ten-AN-go”) region of Guatemala and has the highest altitudes in the country, as high as 2,000 meters. Super juicy coffees with malic acidity define the flavour profile of the best coffees from 'Huehue'.
