Cristian Lavan is a young producer with Lima Coffee, with only 1 hectare of land on his farm, El Manantial. He has been able to establish a small mill, where he has the infrastucture in place to sort, depulp, wash, and dry his coffees: He ferments the depulped lots for 22 hours before washing them and drying them under a transparent cover of plastic in the greenhouse for 20 days.
The sum of Cristian's dedication and passion to coffee and to his family have paid of in recent years with recogniton in the prestigious Cup of Excellence for Peru with a 13th place finish in 2018 & 17th in 2019 where he submitted the same washed process from his Caturra & Geisha trees.
Peru's lush highlands and great established varieties offer the potential for growers to beat the obstacles of limited infrastructure and market access, and as production increases, we are likely to see more and more great coffee's from Peru.
