El Indio is a farm in the Planadas district of Colombia's Tolima region owned by Camilo Enciso. Camilo is the director of the ASOPEP association which is comprised of 175 coffee producing families in the area who pull their resources, education and harvests together to secure a lower cost of production and a higher price for their coffee.

 

This micro-lot is comprised of 100% Caturra - a variety highly regarded for its quality in Colombia and adaption to high altitudes. This coffee was carefully hand-picked in order to use only the ripest cherries and later hand sorted to remove any defects. Camilo has elected to process this lot as a Natural meaning it was sun-dried on raised beds as whole cherry and carefully rotated multiple times per day until the ideal moisture content was reached - 10.5%. The Natural processing gives the coffee a dense fruit & winey character with a bold body.
